A sweet passito from Falanghina grapes grown within the Tenuta Di Parco Nuovo property at Cellole, part of Villa Matilde’s principal estate.
Vinification: Grapes are left on the vines to dry until early November, then they are picked and placed on racks to complete the natural drying process; in December, they are soft pressed and slowly fermented. Maturation in stainless steel and bottle for 5 months.
Tasting Notes: Amber with golden reflections. An intense bouquet with aromas of vanilla, apricots, ripe fruits, cream and floral notes of roses and tuberose. Excellent persistence of flavours, good acidity and superb structure.
Serving Suggestion: Best served at 10-12° C (50-53.6° F), extremely versatile in food pairings with desserts – especially almond cakes and also foie gras, blue cheese such as Stilton or gorgonzola or to sip on its own.
