Staibano Amaro, the beloved and secret creation of Don Vincenzo Staibano from his time spent on the island of Ischia, during the 1940s.
The Don’s Amaro based on the rare Ruccolino only found on the island of Ischia, is characterised by rocket leaves which gives this a smooth, delicate amaro a subtle piquant flavour to add to its bittersweet profile.
Along with rocket the Staibano family form this liqueur with of course amalfi lemons, other citrus fruits and a mixture of spices, herbs and roots. A combination only known to those close to the family.
The Don created his Amaro to celebrate the birth of his Grandson Piero, which he famously toasted to with a caffe corretto in the Piazza of Amalfi.
To this day the family still enjoy their Amaro added to an espresso, but the flavour profile allows it to work perfectly in a negroni or served on ice with an orange peel and tonic.
