Black truffles have a much stronger flavour than the white truffle variety, so black truffle extra virgin olive oil is a perfect match with stronger flavoured foods such as blue veined cheeses. Adding a few drops to a mushroom risotto will certainly bring out the mushroom flavour.
Used as a finishing oil rather than for frying, black truffle extra virgin oil is perfect on carpaccio or used as a vinaigrette dressing, eggs, pasta, or any dish featuring wild mushrooms.
