‘Omaggio a Gillo Dorfles’ is a wine dedicated to Master Gillo Dorfles, one of the greatest Italian art critics of the 20th Century, professor of aesthetics at the University of Milan and Trieste, philosopher, writer, painter, one of the brightest minds in Italian culture.

Every year professor Dorfles visited Paestum, loving Cilento, the ancient history, the art and the nature of these places. During one of his trips, the professor stayed at the Savoy Beach Hotel. Here he met the owner of the winery, Mr. Giuseppe Pagano. Between these two men a great friendship grew for the common love of the Cilento region.

The professor visited the cellar where he had the opportunity to taste the wines. It was love at first sip. In the wine, flavours and in the philosophy of San Salvatore, the master had found everything he loved about Cilento.

The land rich in history and to San Salvatore wines he decided to dedicate twelve drawings, and then he gifted them Guiseppe Pagano. As a sign of gratitude, San Salvatore decided to dedicate Gillo Dorfles their most precious wine.

So, ‘Omaggio a Gillo Dorfles, ‘Tribute to Gillo Dorfles’ was born, an Aglianico, aged for 24 months in new French oak barriques and a further 12 months in bottles. The labels are made with these Gillo Dorfles drawings, one for each vintage.

This wine comes from a lost clonal selection of Aglianico of Cilento.

Vinification:  The wine ferments at controlled temperature for about 30 days, then spends 2 years in new French oak barriques, 1/3 allier, 1/3 nevers and 1/3 troncais and a further 12 in the bottle before release.

The wine is classic ruby red in appearance. On the nose there are scents of spicy fruits and spices, mulberry, currant and tobacco. On the palate the tannin is powerful but elegant.

Grape Variety: 100% Aglianico

Alcohol: 15%

Serving Temperature: 14-16 °C.

Food Match: Like all Aglianico’s, it is a wine that is well suited to red meat, game and meaty pasta dishes.

The wine is certified organic.
